FENGLI CHICKEN with ARBORIO RICE

When life gets a bit complicated and stressful, we could all do with an escape! With a few choice ingredients, your end-of-the-day routine can take you a world away.

The beauty of this recipe is its versatility. I usually make it with chicken. Yet, it can be made with beef, pork or tofu, as well.

Medium-grain, white rice can be substituted with any grain you like. Long-grain brown rice works, so does converted rice. 

I’ve even paired this with quinoa. If you exchange the meat option for tofu, you can cut the calorie and sodium count down significantly.

FENGLI CHICKEN with ARBORIO RICE

INGREDIENTS

  • 1 lb of boneless chicken thighs, cubed
  • 1 tsp salt
  • 2 tbsp olive oil

rice

  • 2 cups white rice
  • 2 cups chicken stock
  • 2 cups water

  • 1/2 cup brown sugar
  • 1 1/2 tbsp cornstarch
  • 1/2 cup pineapple juice
  • 1/3 cup apple cider vinegar
  • 1 tbsp soy sauce
  • 1 green bell pepper, chopped

garnish

  • 2 fresh scallions
  • 1 tbsp sesame seeds

FENGLI CHICKEN with ARBORIO RICE

DIRECTIONS

  • Heat olive oil in a large pan over medium heat
  • Add chicken to pan, salt to taste. Stir occasionally until all chicken is lightly browned
  • Remove chicken pieces to a bowl and set aside
  • In the same pan, saute’ bell pepper until soft
  • In another bowl, combine pineapple juice, apple cider vinegar, soy sauce, brown sugar, and corn starch. Whisk until fully combined
  • Pour pineapple juice mixture into pan and raise heat to medium high, whisking often
  • Pour arborio rice into a medium-sized pot. (Measurement will simply depend on how much you would like to make.)
  • Add chicken stock/broth and water, in equal measure to rice.
  • Stir to combine then turn the heat to medium-high
  • When broth and water are fully absorbed, take rice off heat
  • When sauce has thickened, add chicken back into pan then turn heat down to medium-low and simmer for 7 minutes
  • To serve, plate the rice, then spoon the chicken and sauce over rice
  • Sprinkle dish with chopped scallions and sesame seeds.
